Different breeds of chickens produce different colours of eggs. In addition to the typical white and brown, some chickens produce blue, blue-green, reddish-brown, or even speckled eggs.

If you have eggs of questionable freshness, fill a bowl with enough water to cover the eggs, then add them to the bowl. If an egg sinks to the bottom, it’s fresh. If it floats to the top, it’s not. This happens because as an egg ages, it develops a larger and larger air pocket in its shell.

The colour of an egg yolk is determined by hen’s diet. The more yellow and orange plant pigments there are in the grain fed to a hen, the more vibrant the colour of the yolk will be.

Egg whites that are cloudy indicate that the egg is very fresh, according to the Egg Safety Center. Clear egg whites indicate an egg is aging; pink or iridescent egg whites indicate spoilage, and these eggs should not be consumed.

The average hen lays 250 to 270 eggs a year.

China produces the most eggs, at about 160 billion per year. In the US, about 280 million hens produce more than 65 billion eggs per year.

There is no difference in health benefits between white or brown eggs. The colour of the shell is purely dependent on the breed of the hen.

In modern henhouses, computers control the lighting, which triggers egg laying. Most eggs are laid between 7 and 11 a.m..
